And, to Top it off... (Yogurt Parfait with Crazy Good Nut Topping)
Almondmilk yogurt, 10 individuals if you’re making a full batch
Fresh berries, any, but I love organic blueberries
Topping:
Macadamia Nuts, 1 cup
Hazelnuts, 1 cup
Cinnamon, 2 teaspoons
Hemp Seed (shelled hemp hearts) 1/2 cup
All quantities adjustable for preferences.
Chop the nuts - I use the little food processor. If you’d like a crunch when you eat, keep the chunks large. If you’d like a smoother result, puree them. If you don’t have a food processor, beat them with a meat mallet or hammer on a cutting board (actually, beat a wax paper covering, so your nuts don’t taste like dirt).
Stir in the hemp seed and cinnamon.
I suggest a large quantity to keep in the fridge, so your new favorite snack is available all week. You could certainly reduce the size of the recipe if you’d like a single serving. 1/4 cup nuts is a serving.
The hemp seed offers good protein (10g), Omega-3 fatty acids (2.5g) and Omega-6 fatty acids (8.5g) for a serving size of 3 Tbsp. If you’d like a full serving size for each parfait, increase the recipe to include 1 1/2 cups hemp seed.
This is another very adjustable recipe. We skip hazelnuts for Katherine and add extra cinnamon for me.
Recipe, as is, provides 10 servings (1/4 cup) of topping.
Refrigerate topping separately until snack time. Then, assemble artistically and enjoy.
